Dennis Ford

Dennis Ford
Plant Manager, Schwartz Brothers Bakery

Dennis has been with Schwartz Brothers Bakery since June 2000. He directs all plant operations, distribution and sales departments. Dennis came to us with over 35 years of bakery management experience at all levels. He Apprenticed in Baking for five years at Knott's Berry Farm Bakery, is a graduate of LA Technical Baking College, Cypress Community College and American Institute of Baking Science and Technology. Past President of Northwest Bakers Production Club. Past Chair of Renton Technical College Professional Baking Advisory Committee. His experience includes various management positions from Supervisor to President and Owner of several major bakeries including: Knott's Berry Farm Bakery, Buena Park, CA., Van de Kamps Dutch Bakeries both in Los Angeles and Seattle, Ruth Ashbrook Bakery, Seattle, Tacoma French Bakery, Tacoma and Gai's/Franz Bakeries, Seattle.

Patricia Byrnes

Patricia Byrnes
Research and Development / QA. Manager, Schwartz Brothers Bakery

Patricia spent her entire career in the foodservice industry, including owning and operating a small breakfast and lunch cafe in Ballard during the early 1980's. After returning home from training at the Cordon Bleu in Paris, Patricia spent two years as Pastry Chef for Seattle's Raison D'Etre. She joined the Schwartz Brothers Family in 1988 to become part of the Opening Team for the original Cucina!, Cucina! Italian Café at Lake Union, filling the position of Pastry Chef. With expansion of that concept, the Schwartz' decided to implement a commissary bakery to supply the desserts for the restaurants. In the 15 plus years with the company, Patricia held a variety of positions including, Bakery Manager, Operations Manager, Pastry Room Manager, Quality Assurance and Research and Development Manager. Patricia has been a key player, allowing Schwartz Brothers Bakery to become a major bakery supplier for the growing Starbucks Coffee Company.

Tuan Do

Tuan "Tony" Do
Production Manager, Schwartz Brothers Bakery

Tony has worked for Schwartz Brothers Bakery since August 1992. He started as a baker and later became a Customer Service Rep. Tony was promoted to Production Manager in 2000. Tony's duties include managing purchasing, receiving, all baking operations, plant scheduling, hiring and training for the production department. In 2004 Tony completed the American Institute of Baking Correspondence Course. In December 2004 Tony was recognized by Executive Management and given a Certificate of Excellence for Bread Product Development.

John Lindsey

John Lindsey
Delivery Manager, Schwartz Brothers Bakery

John has work for the bakery since 1986, starting out as a driver. John is one of the original drivers to begin delivering nightly to the 13 Starbucks stores. John now supervises all the delivery drivers and oversees Maintenance of the vehicle fleet. John also coordinates the interoffice mail program, which includes delivery of payroll checks & daily company mail.

David Walden

David Walden
Sales Manager, Schwartz Brothers Bakery

David has worked continuously at Schwartz Brothers Bakery since 1990. He started out when the bakery acquired the Starbucks account and originally was a driver delivering fresh baked product to the Starbucks stores. In a short amount of time David became the Driver's Assistant Supervisor overseeing the other drivers during his shift. After 9 years with the company, David took over the role of Customer Service/Sales Representative and works closely with the office staff and customers to ensure that their needs are being met.

Sofia Polyak

Sofia Polyak
Accounting Manager, Schwartz Brothers Bakery and Gretchen's Shoebox Express

Sofia has worked for Schwartz Brothers since 1992. She began her career as a bookkeeper at Schwartz Brothers Delicatessen in Downtown Seattle and worked her way up to Accounting Manager position for four divisions of Schwartz Brothers Restaurants. Sofia assumes responsibility for developing accounting procedures and systems, assuring accuracy of all records, maintaining accounts receivable accordingly with the company payment terms, representing Schwartz Brothers way of customer service and satisfaction.

Marissa Coffman

Marissa Coffman
Office Manager, Schwartz Brothers Bakery

Marissa has worked for Schwartz Brothers Restaurants since July 1998. She started off working for Gretchen's Shoebox Express for 2 1/2 years before moving to Schwartz Brothers Bakery. She currently oversees the customer service representatives, the order desk and daily sales operations.

Todd Cass

Facilities Manager, Schwartz Brothers Bakery

In his words: "I am happy to be part of the Team, contributing to the continued success of the Bakery". Todd has been with the company since 2006, and with 30 years experience in wholesale baking, Todd currently manages Maintenance, Sanitation, HACCP Food Safety, Food Defense and all Food Related Regulatory Affairs.

Cesar Gallegos

Cesar Gallegos
Packaging Manager, Schwartz Brothers Bakery

Cesar has been with Schwartz Brothers Bakery since 2000. He started out as a part time packer at the packaging Department. In 2006 he was promoted to a supervisor position then promoted to packaging manager. Cesar's duties include managing the packaging, distribution department, and the new retail line.

Rachid Ouardi

Rachid Ouardi
Plant Manager, Schwartz Brothers Bakery ~ Vancouver

Since 1991 Rachid has been with Schwartz Brothers Bakery in a variety of positions, recently as Manager of Packaging, Shipping and Logistics Maintenance. His vast knowledge and experience throughout all departments over the years has evolved to leading Schwartz Brothers Bakery ~ Vancouver in the well-earned capacity of Plant Manager, where he has been since Spring of 2006.

Hien Van Nguyen

Hien Van Nguyen
Operations Manager, Schwartz Brothers Bakery ~ Vancouver

Hien is a veteran baker and pastry chef, having accumulated experience working with well-respected names such as A la France Bakery, Four Season Olympic Hotel and Café Casino. His career with Schwartz Brothers began in 1987 when Gretchen's of Course and Schwartz Brothers Restaurants took over Café Casino. Continuing to work for Schwartz Brothers Bakery, Hien performed tests and created sample products for Starbucks until early 1998. At that time, Hein relocated to Vancouver, WA to open his own business, Nini Bakery, which he eventually sold to Schwartz Brothers, launching the birth of Schwartz Brothers Bakery ~ Vancouver.

Amy Boots

Amy Boots
Research, Development and Sales Manager, Schwartz Brothers Bakery ~ Vancouver

Upon her graduation from the California Culinary Academy in 1992, Amy has enjoyed an extensive career as a pastry chef in both the San Francisco Bay Area and Portland, thereafter starting up a small wholesale dessert company. In 2004 Amy accepted the position of Sales Manager with Schwartz Brothers Bakery ~ Vancouver, subsequently graduating to include research and development processes for the company.
